This is the first recipe book for making foods with Effective Microorganisms. We covered a wide variety of topics from traditional fermented items such as sauerkraut and Kim Chee to making several non-alcoholic drinks. It took a couple years to test these recipes and make some modifications, including testing how long some of these foods would last before getting a little too funky/sour.

Wow! What a lot of information. I haven't gotten to start cooking from it yet due to personal circumstances, but just reading it has me excited about getting started.
